costing!!!
Costing for ice scramble of cool crumblers
Key ingredients for 2 kilos ice plus mix serving = 185 oz.
Pre mix---Php 135/kilos----1 ½ cup----26.30
Ice-----Php 20 at 10/per kilo (suggestion: additional client disc should be requested)
Toppings ingredients---per serve basis measured (regardless of how many oz. ordered)
Skim milk---200/kilo—1 tsp per serve—Php 1
Choco syrup—540/gal—1 tsp. per serve—Php 0.70
Rice crispies—150/kilo—1 tsp per serve—Php 0.75
Mallows—95/kilo—1 tsp per serve—Php 0.50
Choco kisses—175/kilo—1 teaspoon per serve—Php 0.90
Sprinkles—130/kilo—1 teaspoon per serve—Php 0.20
Total cost of toppings per serve= Php 4.05!!!
Suggestion: basic toppings should be skim milk, choco syrup and sprinkles only---rice crispies etc…should just be add-on ingredients upon customer request!

Based on above costing, it is suggested that we don’t include rice crispies, choco kisses and mallows to Basic recipe because its is not cost effective.
Server will suggest to customer to put add-on’s to boost more sales!!

the 3oz sampling day
here's a pic of the new coleman with the new plastic containers (from baratillo), road tested thru our 3oz sampling to customers, relatives and friends!!! the final scramble mixture recipe is good to go!
